Tribute to Mum

My calendar in May is marked with multiple close friends' birthdays, datelines and most importantly, Mother's Day. I finally found some time to blog my maiden post here after returning from a short break over the long weekend. Wow, it's indeed a busy month for me!

I scoured recipes to search for the ideal cake to surprise my Mum. She usually prefers simple cakes. Finally, I decided to try out the Matcha Japanese Cotton Cheesecake, adapted from Nasi Lemak Lover.

In order to achieve the Matcha flavour, I simply added 20g of Matcha powder to the recipe. I also decorated simply with my favourite fresh strawberries.

The texture of the cake was so cottony soft and moist. Considering my first attempt, I was satisfied with the texture of this cake and the portion of the recipe yield 2x 6" cakes plus 6 cupcakes. I brought the second cake to my office for colleagues to share, they simply loved it!

Mother's Day Dessert Surprise


Since I had leftover ingredients from the above cake recipe with Matcha theme, I decided to venture into making Matcha Choya Tiramisu in dessert cups which I've acquired some time ago. I finally took the opportunity to assemble this recipe. Reviews from colleagues were very promising and they gave their thumbs up after sampling my creation.

Overall, I was quite pleased with my Matcha theme bakes. I shall add on to my Matcha bakes collection in time to come as Green Tea is one of my top favourites. Till then.
